My name is Mike Jones, and I’m a barista at Third Rail Coffee right by Washington Square Park in New York City. I’m going to teach you some basic coffee-making skills.
All right, now I’m going to show you how to pour a rosetta. This is a classic latte design. It looks like a fern. So similar to the heart, start higher up so it cuts underneath the espresso, then as you get closer the foam will rise to the top and you want to move to the back of the cup and rock the pitcher back and forth. Then cut through in the end. You’ll notice that as I was rocking back and forth, I was slowly moving back along the cup and then lifting up at the end and cutting through. And that is how you pour a rosetta.
